Chicken thighs with Mango-Habanero Hot Sauce, what could possibly go wrong there? This delicious recipe with Smokin' Hot Chicks was created by Rico from 010Braai. This amazing sauce makes it a Hot Chick, no less! And for the real diehard, you can double the number of chillies in the sauce.

Smokin' Hot Chick on a Stick

Mango-Habanero Hot Sauce

  • 5 Yellow Habanero Pepper pieces
  • 1 piece of mango
  • 200 millilitre Apple cider vinegar
  • 100 millilitre Water
  • 100 millilitre Mango juice
  • 2 tablespoon of honey
  • 0.25 teaspoon Cumin
  • 05 teaspoons Allspice
  • 1 teaspoon Ginger powder
  • 1 teaspoon of salt

Instructions

    1. Clean the chicken thighs, remove fat and loose bits.
    2. Rub both sides of the chicken thigh with Smokin Hot Chicks and leave to rest for 30 minutes.
    3. Roll up the chicken thigh and put it on a churrasco skewer. 
    4. Cook them gently over a medium heat until the core is 70 degrees centigrade. (No contact with the grill, because of the sugars in the rub!)
    5. Coat the chicken thighs with the mango-habanero hot sauce and put them back over the fire to a core of 73 gr in the thickest part!
    Optional; rub again while cooking over a fire (for the real Règâh experience!!!)
    6. Presentation; slice the thighs along the churrasco skewer, baste as desired with some mango-habanero sauce. Enjoy your meal!

    1. Put all the ingredients in a blender and blend finely.
    2. Put the sauce in a pan and bring to the boil, then simmer for 10 minutes.
    3. Thin the sauce with water if it is too thick. Thickness similar to bbq sauce.
    4. Allow sauce to cool before use.

Notes

TIP: After the rub, wrap the chicken in slices of bacon and cook them in the same way as above.
